Cakes and Cupcakes


Made some cupcakes with the leftover batter and well after icing was put on all the cupcakes there was a shortage. So the cake was covered rather than designed really. Most of the designs on cupcakes are by my younger sister.





Unexpectedly these two weeks have been very busy. The busiest days since I stopped rowing. Inter Faculty swimming meet, athletics meet, badminton selections and I still got 3 lab reports to finish before end of this week and Inter Faculty Karate tournament yet to come. Fortunately last week was mid semester break so I'm still alive to tell the story.

So on this holiday (Today is a holiday because its a full moon day, all full moon days in Sri Lanka are holidays since they are Poya days) I thought of baking a cake and put coloured icing instead of pouring chocolate mousse or throwing chocolate fudge frosting over it as I usually do. It took about 6 hours to get in the mood to make the cake, and then about half an hour to find that there isn't enough sugar at home. Another hour to go shopping and the whole day to make the cake :P

Usually when it comes to toppings tastier ones are either hard to make and you just can't find the ingredients. When you substitute them with local ones they end up worse than a normal topping.
This recipe however was quite tasty and easy to make. But I do accept the fact its a tad too sugary to suite taste buds that are customized to taste the usual bitter chocolaty toppings I make.
